Chickpea Tofu
Ingredients
200g Chickpeas (dry)
500ml water
1tsp salt
Method:
Soak the chickpeas overnight or at least 8hours. Drain them.
Add the soaked chickpeas & 500ml of water to a blender & mix them till smooth.
Pour the chickpea mix through a strainer into a pot. Squeeze the juice out of the grind chickpeas with the back of a spoon.
When you collected all of the liquid in the pot, stir it first real quick (the protein of the chickpeas sink to the bottom through stirring first, it won’t burn. Add the salt.
Bring the liquid then to a boil, while continuously stirring. The mixture will thicken quickly, pour it into a container of choice & leave to harden (minimum of 1 hour).
I like to double the recipe, to have chickpea tofu throughout the week. :)
