Smashed pan potatoes with lemon quark & veggies
Ingredients
Potatoes (p.P. 2-3 middle-sized potatoes)
1 head of Broccoli
1 stick p.P. Celery
Peas
Boil potatoes (with the skins on) till tender.
Cut the broccoli & celery in fine stripes, sauté them in a pan when your potatoes are tender. Add the (frozen) peas close to the end, so they don’t dry out.
Smash the boiled potatoes gently on a cutting board & fry them with a little oil in a pan until crispy.
Prepare quark:

Lemon juice & rind
Bloodorange juice (optional)
Salt/Pepper, nutmeg, fresh herbs, smoked paprika
Combine all ingredients in a bowl & assemble with potatoes & veggies.
*you can also bake the potatoes in the oven, instead of the pan.
